A Taste of Festive Nostalgia

During the festive season, traditions are kept alive from generation to generation through moments of connection around food. With dishes that bring individuals together, these moments of sharing food have shaped cultures, identities, and most importantly, memories. Duddell's - Crispy glutinous rice chicken

Just as turkeys hold significance on major occasions in Western culture, in Chinese traditions, chickens take centre stage at important family gatherings and celebrations. As many heartwarming occasions with my family have included this component, this dish aims to continue upholding these heartwarming moments by evoking the same warmth in others. To do this, the dish showcases a whole crispy, golden chicken filled with glutinous rice, dried scallops, mushrooms, and Chinese preserved sausages—ingredients ideal for the winter season.

Estro - Roe Deer | Chestnut, blueberry Jus

During winter, Roe deer reminds me of my fond memories in Berlin, when I first discovered the pleasure of preparing and savouring this seasonal game meat. Since then, every festive season, deer has been a crucial part of the menu by paying homage to this cherished tradition and nostalgia. At Estro, we pair it with roasted chestnuts and braised red cabbage, both quintessential Christmas ingredients, to embody the spirit of the season.

This traditional Venezuelan bread is a seasonal staple enjoyed by my family on Christmas Day and New Year’s Eve. Homemade, the Pan de jamón is filled with bacon, raisins, and olives to offer a delightful blend of flavours guaranteed to elicit the same feelings of home and comfort. To further personalise the bread, a papelón glaze made from cane sugar found in Latin America is added – significantly enhancing the flavours of the bread and adding a touch of home to it.

Leela - Lucknowi Tokri Chaat

Lucknowi Tokri Chaat holds a special place in my heart, bringing back memories of the warmth surrounding the holiday season and the togetherness of family gatherings. Before opening Leela, I embarked on a culinary research journey where I visited Lucknow with my parents. This trip was especially significant as this was the last time my father was able to enjoy himself before illness struck. Today, this dish reminds me of the joyous moments and treasured times together with family

Ando - Abalone Caldoso Rice

Caldoso rice is a dish that has been an integral part of my family’s tradition and our menu, embodying the spirit of the holiday season. In our family, we gather for a feast on the night of Christmas Eve, indulging in a spread of seafood delights. Any remnants from the dinner are lovingly transformed by my grandmother the following day into a hearty broth brimming with the intricate flavours of the carabinero – serving as a symbol of warmth and togetherness. This flavourful broth becomes the centrepiece during our Christmas day lunch for loved ones to savour together on this special day.

Louise - Duck Pithivier

This special dish is a traditional French pastry rooted in the essence of sharing. In the winter season, crafting the Pithivier becomes a festive tradition among chefs. Personally, it brings me joy to gather with my family and enjoy this dish prepared with simpler, more humble ingredients like vegetables and fish. Despite the busy work schedules during the festive season, I find myself yearning for those cherished family moments.

Gelato holds a special place in my heart. It is more than just a dessert; it is a symbol of family, joy, and the sweet moments that shaped my childhood. Little did I know that this simple pleasure would eventually play a role in shaping my career path. Today, I want to be able to spread joy the same way by bringing people together at Tozzo. With high-quality ingredients and a touch of creativity that preserves the essence of this dessert, our gelato will elevate your holiday season.

22 Ships - Spanish dish Cordero lechal

Cordero lechal, also known as suckling lamb, typically hails from Burgos and Extremadura, the regions where my family is rooted and therefore a staple dish within my household every Christmas. Lovingly prepared by my mother, half a lamb would be roasted in a wood oven, then slow-cooked in its juices until tender and finally, roasted further to achieve a crispy caramelised crust - a truly authentic delicacy. This dish brings me many pleasant memories because each member of my family has a favourite part of the dish that we all share and enjoy together, adding to the special moments we create during the holidays.

Chachawan - Pla Phao Glua

Pla Phao Glua is a dish traditionally reserved for momentous occasions back home in Thailand. Shared with your loved ones, the dish features a whole seabass salt crusted with aromatic lemongrass, pandanus and lime leaf. Cooked over an open fire and served with a refreshing chilli dipping sauce, this dish embodies celebrations and is perfect for sharing during those cherished moments with family and loved ones.
